Matobosha - Desert.....


Matobosha is a special Swahili desert in Swahili community. Matobosha is prepared and gifted to a dearly friend (TUNU) and on special occasions especially during the
o   The holy Month of Ramadhan
o   On weeding ceremonies
o   Birth day parties
o   For a dear friend
o   For husbands
o   For special visitors.
o    
The Holy Month of Ramadhan:
During the holy month of Ramadhan,  Matobosha desert is prepared on a daily basis almost in every Swahili house hold and more so the well to do families. The desert is shared with dear friends, close neighbors, and among the family members.  The desert is usually served after the main dish (Futari).

Birthdays
Birth day is a special celebration especially to children in Swahili community, and for those who celebrate this occasion most of them get this special gift to share with their fellow children.

Special Visitors:
(TUNU) special gift    to visitors whose visits are also special, during engagement (Posa) or Nikkah

Wedding Ceremony:
Matobosha is among the chosen few deserts and snacks prepared by the grooms or bridegroom families (either of the two) and sent as a gift (Bembe) especially during the holy month of Ramadhan and send to the grooms or bride grooms family.  During the wedding ceremony matobosha is prepared and served to the newlyweds, special guests, and among members of the family.

Matobosha Ingredients:
v  Wheat flour                                                        1kg
v  Coconut (Nazi)                                                  2pc
v  Sugar  (to test)                                                  ½ kg
v  Iliki                                                                        
v  Lozi                                                                       
v  Zabibu

Preparation:
v  Boil 3 glasses of water in a safuria
v  Once water is ready, add wheat flours a little by little while mixing with the (Mwiko) till the mixture is well mixed and softer.
v  Continue till the mixture turns yellow – (The yellow color is the prove that it is ready)
v  Remove the mixture of flour from the safuria to the Sinia (big plate) or a basin
v  While still hot continue (Kukunda na mkono) to make sure it is soft
v  Cut mixture in to small small pieces
v  Roll the pieces into a very thin robe like string
v  The rolled thin robe like string is then cut into small small pieces round or oval shape
v  Use the Shahada finger to press in the round or oval shaped pieces to design a hole
v  Grate the coconut using the( Mbuzi)
v  Add 1 glass of water into the Chicha
v  Mixed it well with water and then squeeze the juice from the coconut (the first Juice –TUI – Is very thick) Tui Nzito
v  Add 3 – 4 glasses of water to the chicha to get the 2nd Tui (Juice) this time round the Juice will be light (maji maji) .

The desert is then left to cool down or inside a big bowl of water; an alternative is put in the fridge. The desert is served after lunch or dinner.
